By Tarrin_m, Wednesday, July 30, 2008She has long been enviornmentally aware--an avid recycler, she bikes or walks to wherever she’s going, keeps a rain barrel in her yard, composts, growns her own herbs--but it was when Margot began thinking about restaurants that she found her next green idea. “I like to eat out a lot, “ she said, but when her research revealed that each restaurant meal created a pound and a half of landfill waste, she knew she had to do something. Enter Project Green Fork, an effort to help make Memphis restaruants more sustainable. She is working with three local prototype restaruants (including Tsunami, pictured), though she says “we’re still in the resarch process.” As this certified yoga teacher says, “It all came about through my wanting to do my part to help heal the earth.”
